Ingredients (8 Servings):
-1/3 cup mayonnaise
-1 1/2 tbsp. lemon juice
-3 celery stalks, diced
-2 tsp. scallions, sliced
-2 tablespoons chopped fresh parsley
-8 large romaine lettuce leaves
-1 tsp. kosher salt
-1 1/4 pounds cooked lobster meat, chopped
-16 mini brioche buns
Preparation: In a large bowl, combine the mayonnaise, lemon juice, celery, scallions, and 1/4 teaspoon salt. Mix together in bowl and add lobster meat.
Serving: Add lettuce to each bun before filling with lobster salad. Top with fresh parsley and serve immediately. Try adding arugula salad or coleslaw as a side dish to compliment the rolls.
