-4 (8-oz.) lobster tails

-Extra-virgin olive oil for brushing

-1/4 tsp. kosher salt

-1/4 melted stick of garlic butter

Preparation: Prepare your lobster tails for grilling by opening up the tails with a pair of shears. Use the shears to cut through the top center of the lobster tail just until you reach the base. Open the two sides of the shell, extract the meat, and lay on top the shell. Use a sharp knife to make a shallow score through the center of the meat and pull apart.

Grilling: Start by heating your garlic butter in a saucepan or small bowl. Set aside. Using a grill brush, lather oil on top of lobster meat and sprinkle with salt.
